Attention all cookie lovers this one’s for you.
OK we’re all guilty of being little cookie monsters whether it’s for dunking in your milk or tea or enjoying them on their own. What I love most about these cookies is they look really impressive but are super easy to make!
They are grain free, refined sugar free and loaded with flavour. Impress your kids at afternoon tea time with these guilt free cookies suitable for dunking or enjoying on their own.
INGREDIENTS
2 cups LSA
1 cup coconut
1 egg
4 tbsp coconut oil (at room temperature)
4 tbsp rice malt syrup
1 tsp cinnamon
1/2 tsp ground ginger
For coating (optional)
1/4 cup dark chocolate (90% or more)
1/4 cup slithered almonds
METHOD
1. Preheat oven to 180 degrees and line a baking tray
2. Blend all ingredients in high speed food processor for approx 1 min or until the mixture forms a crumbly consistency
3. Pour entire mixture into a bowl and roll into a firm ball. Place the ball of mixture into the refrigerator for 15 mins
4. Scoop 1 tbsp at a time of the mixture and roll into smaller balls, place on the baking tray and firmly press down to form a flat cookie. Repeat until all the mixture is used
6. Bake in the oven for approx 10 mins or until golden brown. Remove from the oven and allow to cool completely
7. Melt the reserved chocolate. Dip each of the cookies into the melted chocolate and sprinkle slithered over the chocolate.
8. Allow to cool completely and serve
