Add these to the back to school ‘must make’ list.
If you kids love honey and muesli bars then they will LOVE these. These are perfectly crumbly and gooey in all the right ways. And what’s even better is I made them using all our staple pantry items.
We’ve been snacking on these over the weekend and they are perfect to chuck into the kids lunchbox for morning tea or even an afternoon snack
INGREDIENTS
2 cups rolled oats
1 cup spelt flour (can sub with wholemeal flour)
1/2 cup mixed dried fruit
1 cup desiccated coconut
1/2 cup coconut oil (melted)
1/4 cup organic honey
2 tbsp’s tahini (can sub with natural PB)
2 tsp’s baking powder
METHOD
1. Preheat oven to 180 degrees
2. Add all ingredients into a high speed food processor and mix until well combined
3. Press mixture into a lined or oiled baking tin
4. Bake for 20mins (or until golden brown)
5. Remove from oven and allow to cool before slicing into desired sizes
