Being a working mum I’m constantly racing out the door to get to daycare drop off and work on time, which means very little time to eat breakfast. Most day’s I’ll take my brekky to work and eat at my desk while I check my emails but then there are days when I have an 8am meeting andI just can’t function when I’m hungry.
That’s when I started to play around with healthy muesli bar recipes. These grain free bars are loaded with seeds and natural sugars to help me power through my morning.
The double win for these bars is that they make the perfect morning tea snack for the kids lunchbox too.
INGREDIENTS
100g sunflower seeds
100g raw pepitas
50g pumpkin seeds
50g pitted dates
150g dried mixed fruit
50g coconut oil (melted)
1 tsp vanilla
20g coconut sugar
Pinch salt
METHOD
1. Preheat oven to 180 degrees and line a 20cm baking tin
2. Mix pepitas, sunflower seeds, pumpkin seeds and dates in a food processor for 10 seconds
3. Add coconut oil, mixed fruit, vanilla, coconut sugar and salt – combine for a further 20 seconds or until it forms a thick sticky paste
4. Press mixture into lined baking tin, flatten and bake in the oven for 30 minutes or until golden brown
5. Remove from the oven and allow to cool completely before slicing into bar size pieces
