There is something about the flavour combination of a lamington which I love. When I think back to my childhood I loved it when my parents would bring home lamingtons whenever they went to the bakery to buy fresh bread.
These bities obviously mimic the flavour profile of a lamington (think chocolatey, coconutty) whilst being a conveniently freezable little on the go snack
INGREDIENTS
200g almonds
100g desiccated coconut (plus an extra handful for coating)
15 pitted dates
30g cacao powder
40g coconut oil
4 tbsp maple syrup
METHOD
1. Place almonds and dates in a high speed food processor and blend for 30 seconds
2. Add all other ingredients and blend for a further 30 seconds or until you’ve reached your desired consistency (for younger kids obviously blend to a finer consistency)
3. Roll into desired size balls before rolling in desiccated coconut (we use a heaped teaspoon for kids servings and a heaped tablespoon for adult servings)
4. Refrigerate for 30 mins (or until they are firm) and store as you please (We like to store them containers in the freezer so we can grab them on the go)
